COOKING UP SOME YELLOW SUMMER SQUASH FOR CASSEROLE

I had a few tomatoes from my garden and my dads. He brought me a pile of produce yesterday. I decided to make some salsa even though I was missing cilantro and I was only going to get a little bit. Making salsa is one of my favorite things to can. My salsa is different every year. Last year I made peach salsa.
